Super Easy Avocado and Prawn Toast

These delicious little mouthfuls are a quick and easy option for your next entree, side-dish, party plate or maybe just craving quencher!
This recipe is very basic to make your job as easy as possible.

Ingredients
  

  • 2 Loaves Sourdough Baguettes
  • 75 grams Butter
  • 5 Large Avocados
  • ½ tsp Chili Flakes
  • 500 grams Prawns
  • 3 tbsp Olive oil
  • ½ tsp Paprika
  • ½ tsp Garlic powder
  • ¼ cup Lemon juice
  • Salt and pepper
  • chopped parsley sprinkling

Instructions
 

  • De-tail the prawns and marinate them in olive oil, paprika, and garlic powder. Leave to marinate for at least 20 mins - an hour.
  • Mash the avocado with 1 tbsp lemon juice, chili flakes and salt and pepper to taste. Set aside.
  • Slice your Baguettes into 1 1/2-inch-thick slices. Butter both sides of each slice and gently pan-fry till both sides are golden brown.
  • Pan-fry prawns on high heat until just cooked through, roughly 1 minute per side.
  • Set aside and add salt, pepper, and lemon juice.

Assembling

  • Add a generous amount of mashed avocado to each slice.
  • Add a prawn on top of each.
  • Finish with a sprinkle of chopped parsley.

Notes

If you're preparing multiple dishes, this recipe is a great one to do hours ahead of time. By cutting and buttering your slices, having the avo mash in the fridge, and marinating your prawns, all you'll have left to do is cook and assemble.
